Carob tree, Ceratonia siliqua L.

The Carob Tree belongs to the Fabaceae family which grows as an evergreen tree up to 10 m high with thick leafs pinnating with 3-5 leaflets. Their flowers are small and green. The Carob tree is native of the Mediterranean vegetation and is also cultivated by interplantation in North Africa.

The Carob fruits are the dried mature pods of Ceratonia siliqua L. The fruits are an indehiscent pod, elongated or curved, 10-20 cm long, 1.5-4 cm wide and about 0.5-1 cm thick, blackish brown, includes 10-15 seeds, with special odor and sugary taste.

The fruit is rich in carbohydrates (40-60 %) mainly sucrose (32-38 %), fructose (5-7 %) and glucose (5-6 %). It also contains dietary fibers (27-50 %), polyphenols, flavonoids and tannins (18-20 %). In addition, the fruit includes minerals of potassium, sodium, iron, zinc, manganese, copper along with vitamins and low amounts of protein (3-4 %) and lipids (0.4-0.8 %).

The Use of HerbaFarm Ground Carob


Carob tea cures the respiratory system symptoms. One tablespoon of HerbaFarm Ground Carob added to a glass of water, boiled for 10 minutes. With no extra sugar added, can be consumed twice a day.

Two tablespoons of HerbaFarm Ground Carob (20 g bag) can be added to yogurt, muesli, soup, or salads.

Carob Cookie Recipe




300 g HerbaFarm Ground Carob

400 g gluten-free flour

2 eggs

20 ml honey or molasses

100 g butter

10 g baking soda

* Optional – almond or walnut


First, mix the egg and butter thoroughly, add honey and continue kneading. Then add gluten-free flour and carob flour. Add baking soda to the dough and keep mixing. Add almonds and walnuts. You can use oiled pan or baking paper. Preheat oven to 180 degrees celcius. Cook 15-20 minutes with occasional control at 180 degrees celcius.

Carob Cake Recipe




400 g HerbaFarm Ground Carob

300 g gluten-free flour

2 eggs

20 ml honey or molasses

50 ml natural extra virgin olive oil

200 ml milk

10 g baking soda

5 g cinnamon

2 grated carrots

* Optinal – almond or walnut


Eggs, honey, olive oil, almonds and milk are poured into a bowl and mixed. Carob flour and gluten-free flour are added. Then add baking soda and cinnamon and mix. Add fruits to the mixture and pour it into an oiled cake pan. Preheat oven to 180 degrees celcius. Cook for 20-25 minutes.
